Chicken Bacon Ranch Quesadillas
If you are hungry for something south of the border, mixed with something that a popular American dish, then look no further! This is a wonderful recipe that you will want to eat on a regular basis!
Makes 2 Quesadillas
Ingredients:
- 8 oz. cooked & shredded chicken breast
- 1/2 c. Greek yogurt
- 3 T. ranch dressing powder
- 4 slices bacon, cooked & crumbled
- 1 T. jalapeños, diced
- 1 tsp. garlic powder
- 1 tsp. salt, or to taste
- 1/2 tsp. black pepper, or to taste
- 2 – 10″ flour tortillas (or gluten-free flour tortillas)
- 3/4 c. cheddar cheese, shredded
- 1/4 c. Mexican cheese
Directions:
- Add the shredded cooked chicken, bacon crumbles, Greek yogurt, ranch dressing powder, diced jalapeños, garlic power, salt (to taste) & pepper (to taste) to a bowl.
- Mix all ingredients together, with your hands or a rubber spatula, until they are well combined.
- In a skillet, or a flat cast iron pan, add a flour tortilla.
- Sprinkle on one half of it with half of the shredded cheddar cheese. Then add half of the chicken mixture on top of the cheese.
- Fold over the other half & brown the flour tortilla. Then flip it over & brown the other side. It is done when both sides are toasted & the inside is hot & the cheese is melted.
- Melt the Mexican cheese & drizzle it over the top of the Chicken Bacon Ranch Quesadilla before serving.
- Cut it into two or four slices to serve!
